Place both sides of the squash face down on a baking sheet. Place cubed peeled buttenut squash in a food processor with pure maple syrup, unsalted butter, grated peeled fresh ginger, kosher salt, black pepper, and grated garlic clove; process until smooth. Spread squash in a single layer on a rimmed baking sheet.
Use a spoon to scoop out the seeds - discard.
Toss with oil, and season with salt and pepper.
