In a skillet melt butter and then add the flour. Repeat with the remaining crepes, egg mixture, and cheese. Roll crepe and drizzle more béchamel on top, and sprinkle with gruyere cheese and paprika.
Pour into the center the milk, eggs and salt.
Time to prepare the bechamel sauce.
Salt and nutmeg add a subtly fragrant and savory flavor. Add the milk and whisk to remove all chunks. Put in a plate and cover to keep humid.
